Light golden syrup
It is pretty mild on the nose. There is a hint of charred oak but not the powerful oak you would expect from this Orcadian spirit that has rested in Islay oak.
And there’s the smoke! Its a gentle but unavoidable peat smoke but there is so much more than that in this dram. Sweet, juicy stone fruits of peach and nectarine fill the mouth.
Finish: A rollercoaster of flavours which combine all the fruitiness of the pallet with that incredible cask. Quite simply sumptuous.
Floral, lots and lots of blossoms, delicate fruit, a very little smoke and something not unlike frankincense, fleeting but delicious with just a delicate birch sap at the end.
